If you can't think what to have as a light lunch or dinner and have lots of veggies but not much time, or no recipes are inspiring you... just try chopping them all up and stir-frying them and for the last minute add a good dollop of hummous, this tastes incredibly yummy, especially if there are broccoli florets in your veg mix. biggrin

Nice one,Jayx. Also works well using peanut butter instead of houmous. Thin the peanut butter with a teapoon of vegetable or sunflower oil. biggrin

I like how stir frys can have a lot of veggies in them and still taste good.
Plus I really like pasta and it is hard to find veg Asian cuisine.

I love the peanut butter trick, and I also like throwing a handful of pre-cooked rice noodles in. :)
