vegetable tempeh bake with fresh parsley

2 raw beets - unpeeled - cut into bite sized pieces

1 large sweet potato - unpeeled- cut into bite sized pieces

3 carrots - unpeeled - cut into bite sized pieces

2 tart apples - cored and unpeeled - cut into bite sized pieces

4-5 turkish figs - quartered

1 can of butter beans - rinsed

1 package of tempeh, cut into bite sized pieces

1 and a half cups of squash (I used yellow) cut into bite sized pieces

1 cup of onions - cut into bite sized pieces - any variety (best if several varieties are mixed together)

destemmed fresh parsley - 1 cup

2 tablespoons rosemary (fresh if you can)

 

Preheat the oven to 425

In a large oven cooker (I use stoneware), add 2 tablespoons olive oil, add the carrots and sweet potatoes and toss, bake the carrots and sweet potatoes for 10 minutes

Add the beets and toss, bake for another 10 minutes

While that's baking, mix together the beans, apples, onions, squash, tempeh, figs and herbs in a bowl

Add these remaining ingrediants to the oven cooker and bake an additional 15 minutes

This makes about 8 servings, and is great as left overs.  Many substitutes can be made depending on what you have on hand.    Using fresh herbs is best.

Where do you get turkish figs?
I have never had beets before.
I don't know if I like sweet potatoes.
