So... whats for dinner?

Tonight I did a pepper stir fry with red, yellow, and orange peppers, celery, carrots, snow peas, and jicama, over some sauteed rice noodles with teriyaki sauce. It was pretty yummy. biggrin

I had grilled potato and mushroom with a bit of virgin olive oil and a mosh* of herbs thrown in.

*Mosh = what ever herbs sound good at the moment.

I was lazy today. I had Pad Thai with Tofu (frozen meal) from Ethnic Gourmet. And for dessert? Kinnikinnick gluten free/dairy free chocolate dipped donuts.

I am being lazy-ish tonight, I'm making a Thai green curry using a shop bought vegan green curry paste, I'm going to add tofu, coconut milk, chinese leaf (aka napa cabbage) and shiitake mushrooms.

Last night I had a salad and made the salad dressing suggested by Jayx. (carrot juice and avocado). It was delicious!

Oh, and Jayx, I volunteer at a organic fruit/veggie co-op and told as many people as I could about the salad dressing.  Since they get carrots and avocados in their boxes, they were excited to get a new recipe.

Great Cemblee! So glad you enjoyed it, I hope they all do too.
I'm going to make Sambar ( an Indian spicy soup) tonight with lentils, broccoli, courgette (zucchini), carrots and drumsticks (not the chicken variety lol).

Tonight I'm making tostadas, with refried pinto beans, on top of crisp corn tortillas with chopped green onions, tomatoes and finely shredded raw spinach and some green salsa. YUM!

I had a big bowl of steamed veg tonight as it was all reduced greatly in the shop (use by date tomorrow), brussels sprouts, corn on the cob, some new potatoes, for less than £2
also quickly stir fried some pak choi (bok choy) in coconut oil with garlic, ginger, chilli flakes and tamari sauce as I thought the pak choi would be too bland steamed!

Stuffed Peppers for dinner tonight! Filled with chopped up mushroom, onion, minced garlic, fresh parsley, rice, boca crumbles, a spanish style tomato base, salt, and pepper. It was awesome :-p

Tracey those sound fab. Tonight I had tostadas (can you tell I like them?) Guacamole this time with shredded raw baby spinach and diced tomatoes and salsa.

I had courgette (zucchini) soup using homemade vegetable stock, baby green & yellow courgettes, black pepper, ginger, herbs & turmeric, and made creamy/thickened by blending it with 1/2 can chickpeas and some tahini.
Also had some yummy roasted chunks of beetroot, caramelised in balsamic vinegar.

Veggie enchiladas were soooooooo yummy. Made enchilada sauce (simple recipe; let me know if you want it). Inside: refried and black beans, onions, peppers, and a little fake cheeze. The killer ingredient was the topping: avocado cilantro sauce. Oh so delish.

Made a package of mandarin Gardein chicken, with white rice and some veggies [some squashes or zucchini, cauliflower, I think broccoli, and carrots] - a huge plate all to myself.
Should have put the sauce with the rice and not the chicken but maybe if I do it next time I will change that.
I also added some sesame oil we had to it after I took a few bites.
I mean it tasted good how I had it, but got reminded we had sesame oil, so I tried it with that.

Can I come over to your guys' houses for dinner? Not to be rude and invite myself but...

I made Tamales today. I put black beans, lots of onion and garlic, some chopped roasted chilies and tomatoes and some salsa in them. Pretty good!

The 2021 Steinlager Series will be anchored on two Tests between the All Blacks and Fiji in what will be the first time the All Blacks have played back-to-back Tests against the Flying Fijians. The All Blacks have played Fiji nine Maori v Samoa  times before, but not since 2011 in what was the final Test match at Carisbrook in Dunedin.
